My trip to Singapore came with 2 main itinerary; Sup Tulang Merah (Red Bone Mutton soup) & Universal Studios.
As expected,I was looking forward to the notoriously red concoction more than Universal Studios; having read of it some while back & thus was glad to finally be able to try it myself.
But of course, as you can read about my experience in Universal Studios (post HERE & HERE ) , I did actually had fun 😉
This place is near Arab St and is mere minutes away from Orchard Road.
Quite accessible really, & it boasts of clientele such as Malaysian artists from the likes of Amy Search to Erra Fazira.
Ma Deen Biasa Pte Ltd is alike any typical mamak restaurant; with the only exception being the sup tulang merah, it’s signature dish; legendary for its crimson hue.
Our order for 1 pax.
A basket of thickly sliced baguette-like bread came with each order, & was perfect to mop up the delicious sweet gravy; which though was deceivingly bloody, had just the barest tinge of spicyness.
There is not much meat per se on each chunk of bone, and just like the sup kambing (mutton soup) at mamak restaurants, the main point is to enjoy the gravy, together with some bits of meat & the MARROW.
Not every bone came with marrow within, but I hit jackpot with this one! Wohooo!
I know it may look disgusting, but it tasted amazing. It has the appearance of pure gelatinous fat, but it’s firmer, ‘slimy‘, & sweet.
The taste of bone marrow is as much about the texture as the flavour. The texture is unctuous, almost similar to a soft scrambled egg with the melt in the mouth feel that you get from foie gras.
Oh dear, I have been gushing about the marrow, but yea, the meat itself is tender and flavoursome too. :yes:
I was supposed to order the mee (noodles) which is said to be reddish as well. Well, being a sucker for bread I had this instead.
Wrong choice. 🙁 It was barely memorable.

apparently bone marrow is a source of GOOD cholesterol, which fights BAD cholesterol. i hope that’s true 😛

But I find the bone marrows prepared the D’sh way or the “western” way taste different…

Hmmm. Have never tried marrow before actually… but yeah, it does like kinda gross and slimy…
(Haha… love how no one seems to be sitting inside the mamak but sticking to the true blue Malaysian roadside dining, despite all the construction…)

Yup, its not so muhc for the meat but more like for the gravy & marrow :whistle:
Been wanting to try this but every time I go to Singapore also kind of missed it. Will be going down again on Thursday lol. Will be there for a week, so this time I won’t miss it.

Hahah! Sweet frm the gravy, it is not as soft as pure fat; with a slight “bounce” & it is “slippery”- hence slimy!

Currently the best tulang merah is in Newton circus stall 61. No regrets. Bones are boiled b4 cooking thus meat is soft. Don’t take my word for it, TRY IT!!!
