A regular at Oscar’s at Conrad Centennial Singapore over the past 2 years, be it for breakfast, lunch, weekend brunch or dinner, I’ve personally witnessed and tasted the recurring enhancements made to their buffet spread.
Hotel buffets get predictable after a while thus a refreshing change is always in order.
Keeping your guests happy, satiated and curious for change more often than not would attract repeat customers.
The Oscar’s team had never rested on their laurels.
Though long known for the quality of their food and decent spread in tandem with its prices, Oscar’s refreshes its theme every quarter or so.
Stations such as seafood on ice and the sashimi remained constant of course, and I don’t think anyone in their right mind would complain about that.
I enjoyed my buffet lunch yesterday, this time checking out Oscar’s “Local Delights with Peranakan Highlights” a themed buffet from July 11th until August 31, 2016.
This spread includes international delights as well as a section where the focal cuisine is Peranakan. Grab your Dry Laksa Pasta with Spicy Coconut Espuma Foam, Ayam Buah Kelauk, Ngoh Hiang (meat roll), Babi Pongteh, Nyonya Chap Chye, Pai Tee and Prawns Curry.

In addition, savour other Singaporean favourites such as Roast Duck, Sweet and Sour Crispy Pork Belly, Spicy Chilli Crab with Crispy Fried Bun, Sambal String Ray served on Banana Leaf, Chicken and Beef Satay.

The humble rojak and achar (vegetables pickles) are each given a featured section too.
I’ve noticed that the items on the spread are rotated consistently. For example, there was Babi Pongteh yesterday, but today it was Ayam Buah Kelauk instead.
I loaded up on the crispy roast pork, succulent poached chicken which was smooth and juicy (Chef Andrew said it was Sakura chooks!) and the char siew of course.
I mean, unlimited servings of roast pork? Hell yea!
The roast pork is superb – crackling crispy skin, juicy meat and soft fats without being overly salty. This has my name all over it.
If you prefer, the char siew cuts are decent as well.
Have you seen a sexier chick?
We savoured every bite and dipped it in the chicken rice chilli, which by itself is superb.
A special mention is due to Malaysian (Ipoh boy) Pastry Chef Sivarajan who has been in Conrad for 6 years.
He is one of the few chefs in the pastry team that is responsible for keeping the Oscar’s dessert section delicious every day.
I like the current dessert spread; particularly the Chocolate Royal Hazelnut Crunch, Almond Polenta Cake with Pistachio Mousse and Lemon Curd as well as the novel Chendol in a glass topped with a cloud of concentrated coconut mousse.
Thumbs up for these!
Chocolate Royal Hazelnut Crunch – The side of the cake is jaconde and one of the inner layers are florentine and hazelnut praline paste followed by another layer of chocolate mousse made of 55% and 72% % dark bitter cocoa.
The cake is crowned with chocolate sheets and fresh, plump cherries.
Almond Polenta Cake with Pistachio Mousse and Lemon Curd.
Chef Sivarajan and the lovely Chendol with Coconut Espuma. Don’t forget to get a glass of milky teh-tarik too!
Food aside, I must commend the Oscar’s team on their warm hospitality and service.
Manned by an adept kitchen team plus an efficient, obliging floor staff, I have always stepped out of Oscar’s satisfied, happy and looking forward to be back.

I bet it would! There was a bowl of keluak paste right beside the pot of ayam keluak for those who are big fans – so they could add on more keluak paste!
