Remember the Taiwan Original Cake that was all the hype recently?
Though many find it bland and said it was overrated, personally I enjoyed both the original and cheese flavour.
Yes, the taste is mild, but people don’t understand that it was meant to be that way.
It is a TRADITIONAL egg sponge cake. I mean, what do you expect an egg sponge to taste like?
Besides, as a baker, I thought it was a darn fine egg sponge!
The crumb is fine and smooth and the cake is light and delicate.
Inspired by the cake, I launched my own version with my salted egg yolk kaya.
After I eat the original version and then the cheese one, I realized that the egg sponge needs “flavour” from other sources, and my salted egg yolk kaya complements it nicely.
So here it is!
My egg sponge salted egg yolk kaya – RM28 for a 4″ x 8″ loaf.
What you see below is 2 cakes (1 cake is half loaf).
Rest assured that we are generous with the kaya so our cake won’t be bland!
