For sale: Best bak kwa – Chinese BBQ meat jerky

There used to be a time when people eat bak kwa (Chinese style BBQ pork jerky/ also known as Yok Korn in Cantonese) only during Chinese New Year.
Bak kwa was also popular as gifts.

Today, people eat bak kwa (BBQ dried meat), bak chang (glutinous rice dumpling) and even glutinous rice balls in syrup whole year.
These “traditional” items have evolved to be daily treats, no more exclusive to certain times of the year or during festivals.

The bak kwa, for example, is perfect snack food and tasty on its own or with bread. Kids love them, adults enjoy them and old folks find them familiar.

I had wanted to know where to buy the best bak kwa in Malaysia and did a long hunt last year for them.
From KL to PJ to Penang and Ipoh and even homemade ones from Melaka – I bought and I ate and I dumped a lot.

Most are greasy, overly sweet, low on meat and high on flour or fillers.
When I finally found this bak kwa earlier this year, I thought I hit the jackpot.

It is not overly greasy and sweet enough.
Personally I would prefer it to be lower in sugar but the traditional recipe of bak kwa requires it to be of a certain amount of sweetness. Similarly, if it is low fat, it would be dry, tough and chewy.

These are moist, juicy and absolutely addictive.
My customers love them and I personally find both hard to resist once I start chewing on one.

Between the minced meat in sliced (using minced meat yields softer and juicier bak kwa) form and the bite sized squares, the sliced ones are smokier and leaner.
The bite sized ones (I call them TITBits) are juicier due to its higher fat content. Based on feedback, the TITBits are more popular for that very reason – juicy, moist and easy to eat.
