Chinese New Year menu 2016 at Celestial Court, Sheraton Imperial KL – Pork Free

With a new MD in place, Sheraton Imperial Hotel Kuala Lumpur is set to shake things up a little this 2016.
The F & B division for one, has already implemented some transformation.

My vote for excellent pork free dim sum in KL has always been unreservedly for Celestial Court.
I’ve on several occasions enjoyed ala-carte dining sessions here too; in 2013 we enjoyed sea cucumber intestines (I kid you not. Link HERE, check it out!) while for 2014 I remembered classical but adeptly prepared Cantonese dishes.

In 2015, there was an excellent poon choy that we devoured as well as an introduction to the Netherland Arctic Char Fish, which was certainly my first encounter with the creature.

This 2016, Celestial Court’s Chinese New Year sets shown much promise.

The 4 sets available offer a compelling mix of classical and contemporary dishes with a mix of uncommon and unexpected pairing of ingredients.
These sets begin from RM1988 nett to RM2688 nett for a standard table of 10 pax.
Luxurious elements peppered the menu; Boston lobster, imported goose webs, cordyceps soup as well as highly prized fishes such as pomfret, Goby and soon hock so this is where you need to be if you are looking to enjoy quality ingredients prepared with skill or if you are seeking to impress a business associate.

We began lunch with three, yes, THREE (3) yee sang!
My usual modus operandi with yee sang is to sample 2-3 bites and save stomach space for subsequent dishes. At Celestial Court, the 4 yee sang are prepared with fresh, finely shredded ingredients and less of the fried and pickled items so such versions agree with my palate more.
That means I took extra helpings, something rather uncharacteristic of me.

Furthermore all 4 yee sang in the 4 Chinese New Year set menus this year incorporated fruits. The results were truly enjoyable versions of yee sang which I would recommend wholeheartedly.

The Celestial Court Boston Lobster Yee Sang with Peach is undoubtably a lavish and indulgent yee sang, ideal for those seeking to indulge the guests as well as the tastebuds.
For a more familiar version, I’ll recommend the salmon and monkey head mushroom yee sang which is paired with Thai Mango sauce, else the Baby Abalone with refreshing Snow Pears.
It is the Monkey year coming up and we found bananas in our Jelly Fish Flower Yee Sang with Banana with Plum Sauce. This rendition is a first for me and it turned out to be a refreshing version!

2 soups followed next.
Take a break from the ordinary and slurp this bowl of seafood broth instead of the usual double-boiled or herb-based soups.
The fish roe and green color would be a good conversational topic for sure.

But if something a bit tradition is required, then this seafood soup will fit the bill perfectly.

The prerequisite fibre dish can be the standard braised vegetables dish, or you can opt for greens with a bit of heat such as this sweet peas dish with scallops.
Well, it certainly looks like there’s more scallops than peas, but no one would balk at too much scallops right?

I don’t like noodles much but I adore e-fu Noodles. These strands of eggy e-fu noodles are perfect to soak in the delicious broth they are cooked in and this was no exception.
Generous heaping of seafood added allure to this dish. Move over fried rice, this is the carbs dish that everyone should be enjoying this Chinese New Year.

Uncommon imported ingredients such as goose webs are a finger-licking treat, especially to those who appreciates such traditional ingredient.
These webbed feet were given due justice; braised to a smooth, silky perfection.

Har” signifying “laughter” in Chinese were represented by these succulent prawns done 2 ways.
I love dishes done in combos or dual cooking. It is like paying for one dish but enjoying 2 dishes, don’t you agree?

Dessert is this utterly wonderful double-boiled bird nest with white ginseng and snow fungus, pear and red dates.
Not overly sweet with a discerning bitter end from the ginseng, this dessert was both indulgent and nourishing. I love it!
