I visited recently for dinner as I was seeking a halal buffet to entertain my friends.
The entire kitchen is halal certified here so it fits my client’s requirement. This is my latest visit after my last visit in October 2011!

As I made my way around the buffet the pretty display of food all around me beckoned enticingly.

Where should I start; a question many would ask as one stood in the middle of Mosaic.
As with all buffets I found myself gravitating towards the cold corner. I piled on my plate scallops from the seafood corner where flower crabs, blue mussels, prawns, clams and oyster fin de claires shared the same icy space. The oysters and scallops proved to be the most popular choices for Mosaic diners and were replenished dutifully by the ever attentive staff.

Next to the seafood corner the Japanese sushi and sashimi section showcased a satisfying assortment of tuna, salmon, octopus, butterfish.

Over at the grill skewers of marinated meat (satay) were being barbecued furiously to cater to the dining crowd.
2 whole chickens were rotating at the rotisserie and freshly marinated lamb, beef slices, chunks of seabass and salmon are grilled upon request.
The live grill station is busiest station of the buffet and understandably so. Our plate of lamb chops, beef and seafood was adeptly cooked and the marinate rather tasty.

Other than grilled meats and seafood, large discs of pizzas are freshly baked and served.
On one side top jacket potatoes, glazed turned carrots with pearl onions and tarragon, Braised Lamb Shoulder Provençal and Brussels Sprouts with Crispy Cured Beef & Fresh Oregano were displayed in small pots to complement the grilled items.

For all things spicy and nice, the Indian section offers tandoori chicken, lamb, prawn with naan and other North Indian specialties.
The curries are thick and rich while the meat chunky and tender. The vibrant hues of Chicken in spicy lemongrass sauce, Traditional Malay prawn curry, Homemade cottage cheese cooked with capsicums & spices, Braised boneless lamb in saffron & cashew nuts gravy and Goan chicken curry were hard to resist. All are perfect eaten with flatbread or the fragrant briyani rice.

For a less fiery option the Chinese station offers delicately steamed whole fish as well as mild tasting braised bean curd with diced chicken, Wok fried beef sirloin with fragrant garlic, butter & soy sauce, Claypot stewed chicken with ginger root, Chinese mushroom & oyster sauce.
For soups, our choice that evening was the piquant tom yam or Italian minestrone.

Steaming hot bowls of noodles with choice of masala, chicken or tom yam broth were prepared at the noodle station. Select your noodles and ingredients and the chef in charge would cook these ala-minute for you.
In the middle of the dining area the appetizer spread wide spoiling diners with a mélange of greens and non-greens.

Selection includes Roast beef salad, Chinese BBQ platter, Cold cuts platter, cheeses and bread rolls, Thai chicken salad, gardens leaves with almost 8 different vinegars and dressing oils as well as Middle Eastern dips like Hummus and babaganoush. Our local Malay salads are not forgotten as well, ensuring a very well thought out and cultural spread.

Desserts are all dainty and pretty. Our local kuih are present, and so are French macarons and English crumbles and Chinese cookies.

Chef Uwe Faust had proclaimed proudly that most of the desserts displayed here are not seen on other hotels’ buffet spread and I concurred.
Mere choices aside, the desserts at Mosaic buffets are just as scrumptious as they are visually pleasing.
Some of the desserts I sampled are the Pistachio cheesecake, Coffee panna cotta with mango puree, Club cake, Chocolate velvet dome, Signature chocolate pate, Lemon praline tart, Green yea opera cake and Strawberry consommé.

Chocolate lovers would swoon at both the white and dark chocolate fondue standing tall and tempting with skewers of fruits, marshmallows and cakes at the side.
For the health conscious, a good variety of quality, sweet and large cuts of fresh fruits would be just ideal to finish the meal.
