Culinary Sweden – A Great Food Nation – September 2013

It is a fabulous period for epicureans, with FHM 2013, Culinary Sweden and then KL Restaurant Week 2013 and MIGF coming up next week.

Swedish food may be IKEA meatballs to some, but frankly there’s more to it. For those of us who are interested to find out more, GRAZE at KL Hilton is running a Swedish Food Promotion til 22nd September so how about a Swedish date with a loved one this weekend? 🙂

I had a bit of an initiation to Swedish food myself last week during the cooking demonstration by Chef Michael of Hilton KL. A group of media members were invited to participate in a hands-on cooking session preparing Fish Lasagne, Corned Beef wth Root Vegetables and a Swedish Butter Cake.

Now you didn’t know there’s such thing as Swedish fish lasagne do you? And are you expecting an Italian lasagne lookalike? Well, you’re in for a surprise!
This is Swedish Fish Lasagne, using pasta sheets as well but with cabbage, dill, leek, fennel and cream.

It requires a baking time of 45 mins at 180C and here at the Starhill Culinary Studio we baked it using an Electrolux ovens.

The Starhill Culinary Studio is on MUSE floor, fully equipped with the necessary appliances in a sleek environment.

We dined on Corned Beef next, and I must say this was my favourite dish for lunch that day.

The beef was soaked in brine for 3 hours and then simmered for another 3 hours before it was served with a horseradish veloute. Marvelously fork tender and not overly salty, I finished my portion and actually wished for more.

The Swedish Butter with Elderflower Custard and Marinated Strawberries wrapped up our lunch.

Other events happening within the Culinary Sweden week are Sweden-Malaysia Innovation Dinner as well as The Young Chef Challenge in collaboration with Berjaya University College of Hospitality. The competition is to promote Swedish cuisines, allowing young chefs to feature Swedish innovative dishes.

For the rest of us, we can look forward to Scandinavian dishes such as the much loved Swedish herrings, crisp bread, creme fraiche, perfectly cured salmon Gravlax served with dill stewed potatoes and Swedish mustard dressing, Wallenbergare served with potato puree, clarified butter and green peas at GRAZE, KL Hilton. GRAZE’s menu also promises mouthwatering sponge rolls with fresh berries and cream, cheese cake from Smaland.
Last but not least complete your meal with classic Swedish coffee (You mean there’s such thing?) with a variety of Swedish biscuits.

Sounds intriguing? Well, GRAZE at KL Hilton is where you need to book yourself a table from now til 22nd September 2013.

    very appealing presentation for this dishes! gosh, too bad the promo at the hilton only runs for a very short time, but the menu is definitely a cool one 😀
